Green salad with edamame and pine nuts

Elevate your weekday lunch or include this crunchy salad as a side for your next dinner. This delicious salad with zesty mayo dressing is the perfect nutrient-rich dish with pine nuts and edamame. So, say goodbye to those boring salads, and hello to this green salad bursting with freshness.

Method

1. Simmer the beans in a large pan of boiling water for 8 minutes or until tender. Plunge into iced water and leave to cool for 2 minutes, then drain well.

2. Use a vegetable peeler or mandolin to shave the cucumber into long thin ribbons, then arrange on a serving platter with the lettuces, beans, cress and pine nuts.

3. To make the dressing, whisk all the ingredients together until smooth and season with salt and pepper.

4. Spoon the dressing over the salad, sprinkle with a little more black pepper and serve straight away.

  • 250 g edamame beans; thawed if frozen
  • 1 cucumber
  • 1 frisée lettuce; separated into leaves
  • 1 little gem lettuce; separated into leaves
  • 2 handfuls cress
  • 25 g pine nuts; toasted
  • For the dressing
  • 75 ml buttermilk
  • 2 tbsp mayonnaise
  • 1 lemon; juiced
  • 1 clove garlic; crushed
  • 1/2 tsp caster sugar
  • salt
  • freshly ground black pepper
