Summer Tiramisu with Berries

Take the iconic Italian Tiramisu and turn it into a quick and easy summery berry dessert in under thirty minutes! The super-simple rich layers are packed with flavours and texture in every bite, making it perfect for a sweet snack, movie night treat or decadent dessert for the family.  

Method

1. Put the biscuits on a plate and sprinkle with limoncello. Set aside.

2. Whisk the egg yolks and sugar in a large bowl set over a pan of simmer water until pale and doubled in volume, about 3 minutes. Take the bowl off the heat and continue to whisk for 2 minutes.

3. In a separate bowl, whisk together the cream, mascarpone and vanilla extract. Spoon the egg yolk mixture on top, then fold it all together until smooth.

4. Layer up the limoncello-soaked ladyfingers with the mascarpone cream and berries in six small glasses or jars. Chill for at least 1 hour and garnish with mint just before serving.

  • 12 ladyfinger biscuits, halved
  • 3 tbsp limoncello
  • 3 large egg yolks
  • 85 g caster sugar
  • 150 ml double cream
  • 250 g mascarpone
  • 1 tsp vanilla extract
  • 100 g raspberries
  • 100 g blueberries
  • a few sprigs mint
