Cooking with Linda, pumpkin soup recipe

We are featuring our wonderful Community Managers and their favourite recipes over the next several months. Our next Halcyon celebrity chef is the delightful Linda Studley from Halcyon Landing with her pumpkin soup.

Pumpkin soup recipe


  • 1 small pumpkin
  • 2 tbsp olive oil
  • 1 tsp cinnamon
  • 1 potato
  • 1 onion
  • 1 litre chicken stock
  • 2 cloves garlic

Optional for serving:

  • sour cream and chives


  1. Cut pumpkin and rub with olive oil and dust with cinnamon
  2. Cut onion and potato in quarters. Roast all vegetables and garlic in 180 degree oven until cooked and brown (approx. 40 minutes)
  3. Bring to boil one litre chicken stock cloves and let simmer
  4. Remove vegetables from oven and add to stock and simmer 30 minutes
  5. Blend all ingredients and add water depending on thickness
  6. Finish with sour cream and chives

Serve. Then enjoy!
