Granola and yoghurt parfait with fresh fruit and vegan chocolate chunks

This yummy parfait will not only look beautiful on your brekkie board, but it’s full of crunch and topped with plenty of fresh fruit. Mum is bound to love it!

Method

1. Using a short parfait glass, begin by layering one tablespoon of coconut yoghurt before topping with granola, and repeat until you have visible layers in the glass.

2. Wash fruit before topping your parfait with the blackberries, blueberries and raspberries.

3. Place a few vegan chocolate chunks on top to finish!
