Smoked salmon and cream cheese toasted bagels with rocket

A healthy and delicious no-bake recipe that the kiddies can whip up in under 15-minutes – a loaded bagel is a no-brainer for Mother’s Day brekkie in bed.

Method

Cut the bagel lengthways before toasting (dad can help with this part).
Spread the cream cheese evenly on the bagel halves before placing some slices of smoked salmon and fresh rocket on top.
Remove the sliced radishes from the pickling jar (see note below), and place evenly on the bagel halves before garnishing with caper berries.

Note: pickle your radishes the night before by removing stems and leaves and thinly slicing them before placing in a jar. Create the pickling liquid by heating a few cups of vinegar, a tbsp of sugar and pinch of salt in a pan. Once dissolved, pour liquid over radish slices and seal the jar. Leave overnight for best results!
