Summer Berry Wreath

Brothers Adam and Damien the namesake's from our local Fresh Fruit Brother's Marketplace have shared the below recipe idea for your very own Insta-perfect summer berry wreath that is ideal for Christmas. It's light, healthy and absolutely divine!

Ingredients

1 kg cherries
1 kg grapes (red and green)
3 punnets local strawberries, large ones cut in half retaining the stalks
2 pomegranates, each cut into 6 wedges
1 punnet raspberries, stalks intact
1 punnet blueberries 
30 cm polystyrene wreath, available from the local Spotlight or a meringue base from Coles
A large serving board, platter or tray
Lots of toothpicks
Melted milk chocolate or white chocolate or a berry coulis dipping sauce

Steps
Place the polystyrene wreath on your board as the base and start with your grapes. Carefully place small sprays of red and green grapes around the base and keep them in place using toothpicks to secure them. 
Next place your sprays of cherries in the gaps around the wreath.
Use your delicious local strawberries to decorate and fill in the gaps, pieces of pomegranate are a great pop of flavour and any loose grapes, adding the smaller raspberries, and the blueberries last. 
Drape your slices of mango (if you choose to use them) around the top. Secure your masterpiece with toothpicks.
Place the dipping sauce in the centre and enjoy!

 

Adam & Damien’s Tips
Mix and match the berries according to what is available we recommend using plenty of the cherries and stone fruit for the festive season. 
The strawberries from our local region are also fantastic and mangoes are another great addition for summer. We are loving the Kensington Pride’s coming out of Mareeba at the moment as they are big and juicy and full of flavour. Avoid apple, pear or banana as they discolour quickly.
You can also replace the cream or ganache dipping sauce with Greek yoghurt for a lighter, healthier option.
