Grilled Rockmelon Gaspacho

If you are after a delicious and healthy recipe, look no further. This Grilled Rockmelon Gaspacho can be served as an amuse-bouche for your cocktail parties or as a light lunch option.

Quick and easy, it's the perfect healthy yet tasty recipe to go for at the beginning of Autumn.


Peel and cut the melon and grill for 8-10 minutes.

Put the melon, grated ginger, mango, vinegar, lime, olive oil and tabasco in a blender and blend until smooth.
Season with salt and pepper and add finely sliced mint and refrigerate.

Grill the Proscuitto.

If the mixture is too thick add sparkling water. Garnish with mint and proscuitto.

Serve immediately.
