While we may have shared all of our favourite ingredients in the recipe below, feel free to add in yours – like some tasty shredded cheese or avocado. Step 1. To create the salad dressing, combine taco sauce and ranch dressing in a small mixing bowl. Set aside.
Step 2. To create the taco seasoning, combine the cumin, paprika, chilli powder, cayenne pepper, and salt in a large mixing bowl. Place the shredded chicken into the mixing bowl and coat with the taco seasoning. Shake off any excess (depending on your preferred level of spice). Set aside.
Step 3. In two large glass jars, divide ingredients and layer the taco salad beginning with the dressing. Follow with brown rice, shredded chicken, cherry tomatoes, corn, black beans, lettuce, and top with crushed tortilla chips.
Top tip: start with the dressing so the rest of your ingredients stay nice and fresh.
Refrigerate until ready to eat and serve either from the jar or tip into a bowl and mix for a quick, crunchy, nourishing meal.
