Pulled Pork Burger with Papaya Slaw

There’s something about a pulled pork burger that’s so appealing; however, it’s the kind of thing that feels far too difficult to recreate yourself. In reality, making your own pulled pork is incredibly simple and can be achieved using only four ingredients, some spices and a slow cooker.

Place a pork shoulder in your slow cooker with half a cup of honey and a quarter of a cup of red wine vinegar. In a small bowl, combine two teaspoons of paprika, salt, black pepper, garlic powder, dried thyme and chilli powder. Sprinkle herb mix on pork and leave to cook for six hours with the slow cooker dialled to high. 

Once pork is cooked, simply drain excess liquid, pull apart with a fork, and add BBQ sauce to taste. To complement the sweet and smokey flavour of the pork, a slaw with thinly diced papaya is an unrivalled pairing. Top with coriander on a lightly toasted bun.
