A fried chicken burger is in a league all of its own. To make a finger-licking, Southern-style fried chicken even the Colonel himself would envy, start by combining paprika, black pepper, garlic powder and oregano in an even ratio. Whisk 1 cup of buttermilk with a large pinch of salt and two tablespoons of the spice mix. Toss chicken pieces (preferably butterflied chicken thighs) into the mixture and refrigerate for at least a few hours.
Combine a cup of flour with half a cup of cornstarch and a few more tablespoons of the spice mix. Remove chicken from marinade, adding three tablespoons to the flour mixture before disposing. Coat chicken in flour mixture until thoroughly covered. Deep fry chicken until golden brown and cooked through.
Top off your scrumptious chicken burger with slaw, pickles and a herb dressing.
