- Toast the sesame seeds in a frying pan set over a moderate heat until hot.
- Tip the seeds into a mortar and roughly grind with a pestle. Add the remaining ingredients and stir to combine.
- Transfer to a container, seal well, and store in a cool, dark place until ready to use.
- For the dough: Combine the flour, chopped herbs, salt, and extra-virgin olive oil in a large mixing bowl.
- Add 150 ml water and mix well until a rough dough forms; add more flour or water as needed to bring it together if too wet or dry.
- Turn out onto a lightly floured surface and knead briefly before rolling out into a large round. Lift onto a large baking tray lined with greaseproof paper.
- Preheat the oven to 220°C (200° fan) | 425F | gas 7.
- Brush top of the dough with some extra-virgin olive oil. Spread with the za'atar spice mix.
- Bake the flatbread for about 12-15 minutes until the dough is cooked through and golden-brown.
- To serve: Remove from the oven and let cool briefly before slicing and serving with a garnish of tarragon.
