If you’re a fan of garlic bread, you’ll love this Lebanese variation. In short, Zaatar Mankish is soft flatbread topped with traditional spices. The concoction of herbs makes for a flavoursome pizza-type dish perfect to settle pre-dinner pangs.
1 - Toast the sesame seeds in a frying pan set over a moderate heat until hot.
2 - Tip the seeds into a mortar and roughly grind with a pestle. Add the remaining ingredients and stir to combine.
3 - Transfer to a container, seal well, and store in a cool, dark place until ready to use.
4 - For the dough: Combine the flour, chopped herbs, salt, and extra-virgin olive oil in a large mixing bowl.
5 - Add 150 ml water and mix well until a rough dough forms; add more flour or water as needed to bring it together if too wet or dry.
6 - Turn out onto a lightly floured surface and knead briefly before rolling out into a large round. Lift onto a large baking tray lined with greaseproof paper.
7 - Preheat the oven to 220°C (200° fan) | 425F | gas 7.
8 - Brush top of the dough with some extra-virgin olive oil. Spread with the za'atar spice mix.
9 - Bake the flatbread for about 12-15 minutes until the dough is cooked through and golden-brown.
10 - To serve: Remove from the oven and let cool briefly before slicing and serving with a garnish of tarragon.

- 2 tbsp white sesame seeds
- 35 g | 1/4 cup sumac
- 2 tbsp thyme leaves
- 2 tbsp marjoram leaves
- 1 1/2 tbsp dried oregano
- 1 tsp salt
- 275 g | 2 cups self-raising flour, plus extra as needed
- 1 1/2 tsp rosemary, leaves only, chopped
- 1 1/2 tsp thyme, leaves only, chopped
- 1 tsp salt
- 2 tbsp extra-virgin olive oil, plus extra as needed
- 150 - 175 ml warm water
- To serve: tarragon sprigs
