BBQ & thyme chilli sauce

Method:
1. For the classic barbecue sauce: Combine all the ingredients for the sauce in a small saucepan. Bring to a simmer, whisking until the sugar dissolves.

2. Let simmer for 2 minutes. Remove from the heat and let cool before using.

3. For the thyme chilli sauce: Combine all the ingredients for the sauce in a small saucepan. Bring to a rapid simmer, whisking until the honey dissolves and the sauce starts to thicken.

4. Let simmer for 5 minutes until thickened. Remove from the heat and let cool before using.

5. For the herb oil: Combine all the ingredients in a food processor. Blend on high until evenly combined, about 30 seconds.

6. Pour into a jar and keep covered at room temperature before using.

  • 175 g | 3/4 cup soft brown sugar
  • 175 g | 3/4 cup tomato ketchup
  • 1/4 cup red wine vinegar
  • 1/4 cup water
  • 1 tsp Worcestershire sauce
  • 1 tbsp mustard powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 teaspoon freshly ground black pepper
  • For the thyme chilli sauce:
  • 175 g | 3/4 cup honey
  • 1/2 cup water
  • 2 tbsp rice wine vinegar
  • 2 tsp tomato purée
  • 1 tsp cornflour
  • 1 clove garlic, minced
  • 1 tsp dried chilli flakes
  • 1/2 tsp salt
  • 1 tsp dried thyme
  • For the herb oil:
  • 200 ml extra-virgin olive oil
  • 1 tbsp lemon juice
  • 2 tbsp thyme leaves
  • 2 tbsp oregano leaves
  • 1 pinch caster sugar
  • 1 pinch salt
