Pound the garlic and butter in a pestle and mortar until smooth. Season
with lots of pepper but hold back on the salt for now to accommodate for
the anchovies or bacon (you can always add more later)
Cut each potato into 8 slices and coat each slice in the butter mix.
Reassemble each potato on a piece of double-thick foil and place a small
piece of anchovy (or bacon) and a sprig of thyme between the slices.
Carefully wrap the potatoes.
Lay the wrapped spuds on the barbie on a low heat for 1-1½ hours,
depending on their size and turning every now and again. Cook until
tender and beware of the escaping steam when you unwrap them!
