Tutti frutti cupcakes

  • 2 cups of plain flour
  • 1/4 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1/2 cup of butter, softened
  • 3/4 cup of sugar
  • 2 eggs
  • 1 cup of milk
  • 1 teaspoon of vanilla essence
  • Frosting:
  • 1 packet of cream cheese softened
  • 1 1/2 cups of icing sugar
  • 1 1/2 cups of whipping cream
  • 1/2 teaspoon of vanilla extract
  • Assorted fruit lollies


  • Step 1

    Preheat oven to 180 degrees Celsius and line muffin tray with cupcake papers.

  • Step 2

    Cream butter and sugar until light and fluffy. Beat in eggs one at a time.

  • Step 3

    Add flour, baking powder and salt. Alternate with milk and beat well. Add vanilla essence and mix on a medium speed for 1 minute.

  • Step 4

    Divide evenly among pans and bake for 12-15 minutes.

  • Step 5

    For the frosting, whip the cream on a high speed for 2 minutes until light and fluffy.

  • Step 6

    In a second bowl, mix cream cheese and icing sugar on a low speed for 2-3 minutes then beat in vanilla extract.

  • Step 7

    Fold the cream cheese mixture in with the whipped cream and pipe onto cupcakes.

  • Step 8

    Top your cupcakes with assorted fruit lollies for an added theme. Place the finished cupcakes in the fridge to set the decorations in place.
