Easy melting moments with a citrus twist

Melting moments are the perfect afternoon tea snack and make a great special treat for school lunches. Smooth, buttery and mouth watering - these melting moments can be made fresh in under half an hour.

  • 250g softened butter
  • 2/3 cup of icing sugar
  • 1 teaspoon vanilla essence
  • 2 cups flour
  • 1/3 cups custard powder
  • Lemon Filling
  • 60g softened butter
  • 1 cup of icing sugar
  • 1 tablespoon of lemon rind


  • Step 1

    Preheat oven to 150C and line 2 baking trays. 

  • Step 2

    Using an electric mixer, beat the butter, sugar and vanilla until you reach a fluffy consistency. Next add sifted flour and custard powder. Stir through until a soft dough is formed. 

  • Step 3

    Roll the dough into approximately 32 balls, and then place on the baking tray. Lightly press a fork over the balls to flatten into a coin-like shape. Bake for 15 to 20 minutes. 

  • Step 4

    Once the biscuit is cooked cool for at least 10 minutes. 

  • Step 5

    In a mixer beat butter, sugar and lemon rind until it forms a creamy and light consistency. 

  • Step 6

    Spread the filling onto one biscuit and then place another on the top to form a sandwich effect. 

  • Step 7

    Serve with your favourite warm beverage or a side of fresh cream.
