This coconut, almond, ginger and protein powder smoothie is perfect straight after your workout to help fuel your body for the rest of the day!
Make sure the nuts are completely covered with the warm water. This way they will be easier to blend and better for your digestion
Combine almonds, salt, coconut and 2 cups of warm water in a container. Cover with a lid and then let it sit for up to 8 hours or leave overnight at room temperature.
Then, drain the almonds and coconut from the soaking water.
Add the soaked almonds and coconut to a blender with 2 cups filtered cold water, ice, protein powder, ginger, cinnamon and vanilla extract.
If you prefer a thinner shake, pass the liquid through a fine sieve before serving to remove the almond meal.
Puree until very smooth (this usually takes around 4 minutes), then serve.
