These cheesy egg-based muffin bites are perfect for busy parents. Delicious hot or cold, they’ll go down a treat and satisfy everyone’s snack craving.
Chop mushrooms coarsely and cook in a small amount of oil until aromatic. Crack all eggs into a large bowl and whisk together with salt and pepper. Finely chop shallots and cut spinach into small strips.
Preheat oven to 180°C. Spray muffin tray with oil to make sure the cheesy bites are easy to remove after cooking.
Add mushrooms, shallots and mozzarella to half the muffin tray. To the other half, add crumbled feta and chopped spinach. Top each muffin hole with egg mixture, being careful not to overfill each one. Bake for 10 minutes or until egg is cooked and bites look golden.
Once removed from the oven, the cheesy bites will appear almost like a soufflé. Allow to rest for 5 minutes before removing from the tray. Serve warm or cold for the perfect snack.
