Feed your family for under $20 with healthy Fried Chicken

Ingredients

  • Chicken
  • 1 cup of bread crumbs
  • 1 clove of garlic
  • 1/2 teaspoon of onion powder
  • 1 pinch of salt and pepper
  • 1 kilogram of chicken wings
  • 1/2 cup of butter (melted)
  • Coleslaw
  • Carrot and cabbage shred mix
  • 2 tablespoons of Dijon mustard
  • 1 cup of mayonnaise
  • Sweet potato chips
  • 2 sweet potatoes
  • Pinch of salt and pepper
  • 1/4 cup of flour
  • 1 tablespoon of paprika
  • 2 tablespoons of olive oil

Directions

  • Step 1

    Preheat the oven to 180 degrees Celsius and line a tray with baking paper. 

  • Step 2

    In a bowl, mix the breadcrumbs, salt, pepper, garlic and onion. Dip the chicken wings in the melted butter and then in breadcrumb mixture. 

  • Step 3

    Place the crumbed chicken onto the baking tray and bake in the oven for 15 minutes until golden brown. Turn the chicken over and continue to cook for another 10-15 minutes or until the meat is cooked through. 

  • Step 4

    Peel and slice the sweet potato into strips approximately 1.5 centimetres in thickness.

  • Step 5

    Combine the flour seasoning and olive oil in a medium-sized bowl. Add the sliced sweet potato and mix until the strips are covered thoroughly. 

  • Step 6

    Place the covered sweet potato on a lined baking tray and bake in the oven for about 10-15 minutes or until they are crispy. 

  • Step 7

    Mix the Dijon mustard and mayonnaise together and toss through the carrot and cabbage mix to make the coleslaw.
