Raw Energy Salad

Ingredients

  • 2 large beetroots
  • 1 carrot
  • 1 apple
  • 1/2 cup mint
  • 1/4 cup of parsley
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of olive oil
  • Pinch of salt to taste
  • 1 tablespoon of pumpkin seeds
  • 3 tablespoons of sunflower seeds
  • 1 pomegranate

Directions

  • Step 1

    Grate beetroot, carrot and apple.

  • Step 2

    Dice mint and parsley. Cut open and de-seed pomegranate.

  • Step 3

    Combine all ingredients in a bowl.
