Preheat oven to 180°C (160°C fan forced).
Trim centre stems from kale; tear into small bite size pieces. Combine olive oil, paprika and chilli in a large bowl. Add kale leaves and toss to coat in oil mixture.
Line 2 large baking trays with baking paper. Spread kale out in a single layer on each tray.
Bake for 12-15 minutes or until leaves are crisp, swapping trays halfway through.
Remove from the oven and let them cool on the baking paper for 3mins to ensure maximum crispness!
Serve kale chips sprinkled with salt.
