Rosemary and garlic roasted turkey breast

Ingredients

  • • 8 bone-in turkey breasts
  • • 12 garlic cloves, quartered
  • • 12 sprigs fresh rosemary
  • • Olive oil
  • • Salt & pepper

Directions

  • Step 1

    Preheat oven to 180°C.

  • Step 2

    Insert pieces of garlic and rosemary under the skin. Place additional garlic & rosemary in the neck and abdomen cavities.

  • Step 3

    Rub olive oil over the skin, and season with salt & pepper.

  • Step 4

    Place on rack in roasting pan and roast for 1-2 hours, until skin is nicely browned and meat is cooked through out.

  • Step 5

    Remove from oven and let rest for 20 minutes before slicing and serving.
