Preheat oven to 200°C.
Cook the potatoes in a saucepan of boiling water for 15 minutes and then drain.
Place the oil and butter in a large roasting pan and then place in the oven until the butter melts. Add the potatoes and toss to coat.
Use a potato masher to lightly crush the potatoes then roast until they start to brown.
Combine the salt, lemon rind and paprika in a small bowl, sprinkle the mixture over the potatoes and roast for a further 15 minutes or until golden.
