- 2 medium brown onions
- Olive oil (for the pan)
- 2 tablespoons of brown sugar
- 1-2 tablespoons of balsamic vinegar
- Salt and pepper
- 4 x 1 cm thick sirloins
- 2 small ciabatta loafs
- Mayonnaise (to spread)
Directions

Step 1
Heat oil in a large fry pan over medium heat. Add the chopped onions and a good pinch of salt and pepper and cook for about 5 minutes.

While that’s happening, heat a little oil in another pan. Season both sides of the steaks with salt and pepper, and flash fry for 1-2 minutes on each side.

When the onions are golden, add sugar and balsamic to start the caramelisation. Cook for a further 5-10 minutes until the onions are sticky and caramelised and the sugar has dissolved.

Step 4
Slice the ciabattas in half lengthways and add a little mayonnaise. Spread the bottom half with the onions and sit the steaks on top (you can slice them or leave them whole).
Serve hot and fresh!
