Toss apples with 2 tablespoons of the lemon juice.
Place spinach in a large bowl, removing any long stems or bruised leaves.
Whisk remaining juice, olive oil, vinegar, honey, salt, and ground pepper together to taste. Toss spinach with apples and dressing.
Tip: Replace feta with cream cheese for a creamier taste!
Divide between four bowls or place on a large salad platter, and top with cheese and walnuts.
