Finely chop the parsley and the clove of garlic, then place in a bowl.
Grate half a lemon over the bowl and squeeze out the juice before stirring all the ingredients together.
Season the sardines with a pinch of salt and pepper and drizzle over a little olive oil before placing them on a hot grill or pan, frying for roughly 4 minutes on each side.
Serve the sardines on a plate with the parsley and garlic mixture on top. Lightly drizzle some olive oil over the fish and then slice a few wedges of the remaining lemon and place them on the side of the plate.
