A delicious and easy variation of a chocolate brownie made specially for you by The Organised Housewife.
Did you know there is a specific day of the year to celebrate Chocolate? It’s today July 7th! I am more than happy to celebrate the deliciousness of all things chocolate… white, milk, dark and everything in between. There are so many ways to eat chocolate as a block, in or on ice-cream, biscuits, cakes etc. It is well deserving of its own day of celebration, it is one of the world’s favourite flavours and puts smiles on many faces. Who am I kidding, I’ll happily use any excuse to eat chocolate!!
One of my kids favourite baked chocolate treats is brownies. There are many variations out there with nuts and fruit, but I made a version sneaking in a vegetable… zucchini, it makes this brownie rich, moist and ooh so yummy. Using ingredients from the pantry. I used coconut oil, but you can use canola or vegetable oil if you prefer.
In a large bowl whisk together the oil, sugar, egg and vanilla until smooth. Then gently stir through the chocolate chips.
Fold the flour and cocoa through the wet ingredients, stir until just combined. The mixture at this stage is still very dry, adding the zucchini’s in the next step will moisten the mix.
Add grated zucchini and stir through the mixture. Don’t worry if the mixture appears dry it will be beautifully moist after baking… promise!
Place into slice pan and bake in oven.
I felt the brownies didn’t need any icing, they are perfectly delicious and soft just as they are. You need to try these brownies!

- 1/2 cup coconut oil, melted
- 3/4 cup caster sugar
- 1/2 cup dark chocolate chips
- 2 tps vanilla extract
- 1 egg
- 2 cups self raising flour, sifted
- 1/2 cup cocoa, sifted
- 2 cups zucchini, grated
Preheat oven to 160ºC fan forced and line a square cake tin.
In a large bowl, whisk together coconut oil, sugar, vanilla and egg until smooth.
Stir through the chocolate chips.
Gently fold the flour and cocoa through the wet ingredients, stir until just combined. Note: the mixture at this stage is still very dry, adding the zucchini's in the next step will moisten the mix.
Stir through the zucchini and sit for a few minutes.
Meanwhile, prepare a 13x9" slice pan, lining with baking paper.
Stir zucchini and chocolate mixture again until well combined.
Spread batter into the prepared pan and bake for 25 minutes, or just cooked through.
Cool in pan.
Remove from pan and slice.
