Italian Christmas Biscuits

You cannot go wrong at the Christmas table this year with a batch of easy homemade Italian nut, fig, and honey biscuits! Giving you that sweet fix after dinner, post long lunch, or simply for snacking anytime, the mix of spices and chewy dried fruit means you’ll be coming back for more. Serve with coffee or simply on its own. 

Method

1. Preheat the oven to 150°C (130° fan) | 300F | gas 2 and grease and line a 23 cm | 9-inch round springform cake tin with greaseproof paper.

2. Put the honey, sugar and Marsala in a small saucepan, Stir over a low heat to dissolve the sugar, then simmer for 3 minutes.

3. Meanwhile, put the hazelnuts, figs, candied peel, flour and spices in a bowl and toss well to mix.

4. When the honey mixture is ready, pour it into the mixing bowl and stir well to combine. Scrape the mixture into the prepared tin and level the top with an oiled spatula.

5. Bake for 40 minutes or until just firm. Leave to cool in the tin before unmoulding and removing the greaseproof paper. Cut into squares or wedges and dust with icing sugar to serve.

  • 125 g runny honey
  • 150 g caster sugar
  • 3 tbsp Marsala
  • 350 g roasted hazelnuts
  • 250 g dried figs , diced
  • 50 g candied peel , finely chopped
  • 50 g plain flour
  • 1 tsp ground cinnamon
  • 1 tsp ground mixed spice
  • icing sugar, to serve
