One-pan date night pasta

When you’re in search of a simple yet delicious dish to prepare for date night that takes less than 30 minutes to prepare, this one-pan pasta is bound to impress!

Method

1. Blitz the pine nuts, garlic, and Parmesan in a food processor until a fine crumb forms.

2. Add the basil leaves, lemon juice, and olive oil, pulsing several times until a thick pesto comes together. Season to taste with salt and pepper.

3. Cook the pasta in a large saucepan of salted boiling water until al dente, approximately 10-12 mins.

4. Drain when ready. Return to the pain and stir in the pesto by the tablespoon until the pasta is coated. 

5. Divide between plates and garnish with basil leaves.

  • ½ cup pine nuts
  • ¼ cup Parmesan, grated
  • 2 small garlic cloves, crushed
  • 2 cups basil leaves
  • 2 tbsp lemon juice
  • 110ml extra-virgin olive oil
  • 450g farfalle
  • Pinch of salt and freshly ground black pepper
