Tempura Asparagus

So, you’re in the mood to get a little creative in the kitchen? Perhaps you’re hosting a dinner party – or maybe you’re just really hungry and want to try something new? Whatever your circumstance, were sure that we have the perfect recipe for you – Miguel’s tempura asparagus! 

Like all of Miguel’s recipes, this one is drool-worthy! And if you know a thing or two about tempura, you’ll know that any vegetable can turn into tempura, but nothing quite compares to sweet asparagus. Not only is it delish, but it’s also low in calories and a great source of nutrients. This recipe is quick and easy and will only take 20 minutes – so what are you waiting for? The kitchen is calling!  

 

Method

1. Gradually pour the sparkling water into a bowl of self-raising flour and whisk to combine.

2. Add the egg and whisk into the mixture until combined. Add a couple of ice cubes to cool down the mixture.

3. In batches, dip asparagus in the batter.

4. Deep-fry in a pan of oil for 3 minutes or until golden and puffed. Drain on paper towel.

5. Combine salt flakes with a little paprika and use to season the tempura while it is still hot. Serve with lemon wedges.

  • 2 bunch asparagus, trimmed
  • 1 cup (150g) self-raising flour, seasoned with salt, plus extra to dust
  • 1 cup (250ml) sparkling water (very cold)
  • 1 egg, beaten
  • Ice cubs (to cool down mixture)
  • Lemon, salt flakes and paprika to serve
