Damper, Cheddar and Chives

Nostalgic for camping trips past? Take a trip to the outback in the comfort of your kitchen with the smell of fresh damper. Seasoned with cheddar cheese and chives, this family favourite is given a welcome facelift, resulting in the perfect, shareable snack. 

Method

1 - Preheat the oven to 190°C (170° fan) | 375F | gas 5. Grease and line a large baking tray with greaseproof paper.
2 - Stir together flour, salt, Cheddar, and chives in a large mixing bowl. 
3 - Make a well in the middle and add the eggs, milk, and melted butter. Mix to a soft dough, adding a little more milk as needed if too dry. 
4 - Turn out the dough and divide into 12 portions. Shape into rough balls and arrange on the lined tray, spaced apart. 
5 - Brush the tops with a little milk before baking for 30-40 minutes until golden and risen. 
6 - Remove to a wire rack to cool before serving with some butter on the side.

  • 400 g | 3 cups self-raising flour
  • 1 1/2 tsp salt
  • 110 g | 1 cup vintage or mature Cheddar, grated
  • 1 bunch chives, snipped
  • 3 large eggs, lightly beaten
  • 175 ml milk, plus extra as needed
  • 50 g | 1/4 cup unsalted butter, melted and cooled
  • Butter, for serving
