Banana Bread

What better way is there to start your day than with a piece of freshly baked banana bread? Complement your morning coffee in the tastiest way possible and glide through the morning feeling completely satisfied. 

Method
1 - Preheat the oven to 180°C (160° fan) | 350F | gas 4. Grease and line the base and sides of a 900 g | 2 lb loaf tin with greaseproof paper. 2 - Combine the flour, baking powder, bicarbonate of soda, and salt in a large mixing bowl, stirring well. 
3 - Beat together the butter, sugar, and maple syrup in a separate mixing bowl until pale and creamy, 2 minutes. Beat in the eggs, one by one, and then the milk, vanilla extract, and mashed bananas.
4 - Spoon the batter into the prepared loaf tin and rap on a work surface to help settle. Bake for about 1 hour until golden and risen on top; cover the top with aluminium foil if it starts to brown too quickly. 
5 - When ready, a cake tester should come out clean from the centre. Remove from the oven and leave to cool on a wire rack before turning out, slicing, and serving.

  • 280 g | 2 cups plain flour
  • 1 1/4 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 pinch salt
  • 125 g | 1/2 cup unsalted butter, softened
  • 80 g | 1/3 cup golden caster sugar
  • 50 g | 1/4 cup maple syrup, or honey
  • 2 large eggs
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • 4 medium bananas, very ripe, mashed
