Hot cross bun pudding with custard

Method

1. Preheat the oven to 180°C, gas 4. 

2. Cut the hot cross buns in half horizontally. Spread the bottom halves with the marmalade and place in a single layer in a baking tin. 

3. Chop the chocolate and sprinkle on top. Cover with the top halves of the buns.

4. Whisk the cream with the milk, vanilla, sugar, egg yolks and cornflour and pour over the buns. Leave to stand for about 20 minutes.

5. Bake the pudding for 30-35 minutes until golden brown. 

6. Melt the butter with the honey and apple juice in a small pan. Brush over the hot pudding and serve.

Method

1. Thickly slice the hot cross buns.

2. Mix the eggs with the milk and sugar in a shallow bowl. Add the hot cross buns slices and turn to coat.

3. Heat some butter in a frying pan and fry the slices for 2-3 minutes on each side until golden brown. Remove and drain on a piece of kitchen paper.

4. Peel and slice the bananas. Stack the buns on a plate, arrange the raspberries and bananas on top and serve drizzled with the melted chocolate.

  • 200 g double cream
  • 200 ml milk
