How to make fresh mayonnaise from scratch

Craving the perfect creamy (dreamy) whole egg mayo? Blend, bottle, and bring the flavour to any dish with Miguel’s super speedy mayo hack.  

 

Ingredients

Vegetable oil

1x egg (chilled)

Salt

Pepper

1x garlic clove (optional)

Olive oil

Lemon juice

Blender

Method

1. Begin by adding vegetable oil to your bowl of choice, before carefully cracking the egg into it.  

2. Season the mixture by adding a pinch of salt and pepper.  

3. If you’re wanting to make the mayo into an aioli, add a glove of garlic to the mixture. 

4. Add a splash of olive oil to the mix.  

5. Blend the mix on high until it is completely combined and thickened. Hot tip: don’t stop and start the blender, this will curdle the mayo.  

6. Add a squeeze of lemon to taste if making aioli.  

7. Voila! Your perfect creamy mayo (or ailoi) is ready.
