Kahk Eid Cookies

Celebrate Eid Al-Fitr with family and friends and serve these delicious traditional Kahk cookies. Eid Al-Fitr marks the end of the holy month of Ramadan, during which Muslims observe a fast from sunrise to sunset.  Try this sweet and buttery cookie filled with honey and walnuts and give as a gift to neighbours and loved ones this Eid.

Method

1. For the dough, gently melt the ghee in a saucepan. Mix the flour in a bowl with the salt, cinnamon and sesame seeds. Add the melted ghee and stir with a wooden spoon until smooth. Leave to cool for about 10 minutes. 

2. Meanwhile, warm the milk slightly, add the sugar and yeast and stir to dissolve. Add to the flour mixture and bring together to form a dough.

3. Knead until smooth either by hand or using the dough hook of a hand mixer. Cover with a clean tea towel and leave to rise for 1 hour.

4. Preheat the oven to 175°C, gas 3. Line a baking tray with baking paper.

5. For the filling, melt the ghee in a pan, add the flour and cook briefly, stirring. 

6. Add the sesame seeds, honey and walnuts and heat, stirring, until the mixture thickens. Remove from the heat and leave to cool, then shape into 20-25 hazelnut-sized balls.

7. Roll the dough into a sausage on a lightly floured work surface and cut into 20-25 slices. Place a walnut and honey ball on each and wrap in the dough to enclose completely. 

8. Using a fork, press a grooved pattern into the surface of the dough and place  on the baking tray, spacing them slightly apart.

9. Bake for 10-15 minutes until golden brown. Remove from the oven, leave to cool then dust with icing sugar before serving.

  • For the dough
  • 250 g ghee
  • 300 g plain flour; plus extra for dusting
  • 1 pinch salt
  • 1/2 tsp ground cinnamon
  • 1 tbsp sesame seeds
  • 30 ml milk
  • 1 tsp sugar
  • 1 tsp dried yeast
  • 1 tbsp icing sugar; for dusting
  • For the filling
  • 3 tsp ghee
  • 1 tbsp plain flour
  • 1 tsp sesame seeds
  • 125 g honey
  • 125 g walnuts; ground
