Mini burgers with lettuce, tomato and red onion

These mini burgers with lettuce, tomato and red onion will make the perfect game night snack, new BBQ favourite, or healthy school holiday bite for the kids. 

Method

1. Peel the onions, dice the white one and slice the red onion. 

2. Heat 1 tbsp oil in a pan and fry the white onion until softened. Tip into a bowl and leave to cool. 

3. Slice the tomatoes and shred the lettuce. Chop the mint and parsley, reserving a few mint leaves to garnish.

4. For the sauce, mix the chopped mint with the sour cream, mayonnaise, lemon juice, salt and pepper.

5. Add the parsley to the fried onions along with the egg, beef mince, salt, pepper and breadcrumbs. Mix and knead until well combined.

6. Preheat the grill to high. Shape the mince mixture into 12 small burgers, brush with oil and grill for 8-10 minutes until browned on both sides.

7. Cut the buns in half horizontally. Place a slice of tomato, some lettuce and a burger on the bottom half of each bun. 

8. Top with a blob of sauce, some sliced red onion and mint and put the bun lids on. Serve the remaining sauce in a small bowl.

  • 1 red onion
  • 3 tbsp vegetable oil
  • 3 tomatoes
  • 1 lettuce
  • 4 sprigs mint
  • 4 sprigs parsley
  • 200 g sour cream
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • salt
  • freshly ground black pepper
  • 1 egg
  • 500 g beef mince
  • 2 tbsp breadcrumbs
  • 12 mini burger buns
