Vegan soy milk waffles with blueberries

These vegan soy milk waffles with blueberries are so delicious you won’t even notice they have zero animal products! Find the full recipe below and enjoy your morning (or brunch) with this satisfying dish. 

 

Method

1. Mix the flour and baking powder in a bowl. 

2. Add the sugar, cinnamon, vanilla, salt, soy milk and oil and mix until smooth. 

3. Heat a waffle iron and brush with oil. Cook the batter in batches to make 8 waffles.

4. To serve, peel the oranges, removing the white pith and cut into slices. 

5. Place the waffles on plates, drizzle with the almond butter and garnish with oranges, blueberries and mulberries.

Ingredients

  • 250 g wholemeal self-raising flour
  • 2 tsp baking powder
  • 4 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 350 ml soy milk
  • 80 ml vegetable oil; plus extra for greasing
  • To serve
  • 2 blood oranges
  • 4 tbsp almond butter
  • 1 handful blueberries
  • 40 g dried mulberries
